How’s the New Year treating you so far? Better yet how are you treating your body? If you haven’t been good to it so far it’s not too late to start. Sometimes we need inspiration. I like to search for my inspiration in the queer world. Last month I talked about some trainers that gave me inspiration on my quest to get fit. Now I want to introduce some women that can throw down in the kitchen and their meals won’t leave you with regret.
Aina Brei’yon; @theuglycook is based out of LA. She's meal prepped and catered both vegan and non-vegan dishes. She calls herself the ugly cook because she doesn’t care if the dishes look professional whenever she plates them. While she is not catering at the moment be sure to follow her for amazing dishes!
I love mushrooms so when I saw these vegan mushroom tenders I was elated! They look just like chicken tenders. While I've given up eating meat, I find comfort in foods that look like dishes I once loved. Her post made me realize there are more options for meatless meals than I thought. I decided to cook the tenders myself with portobello mushrooms. They tasted great but they weren’t picture perfect like hers were.

I love a good smoothie before I workout and this Blueberry Banana Smoothie looks so yummy.
Recipe: 1 frozen banana, ½ cup blueberries, ¼ cup of strawberries, 1 cup of unsweetened almond milk, a dash of agave (optional) and 1 tbsp of chia seeds. I have yet to try this recipe, but i'll be subbing almond milk for coconut milk. You can always substitute to your liking.
Chef Deborah Vantrece
The Chef world is dominated by men so to see a successful chef that is a queer woman of color makes me smile. Chef Vantrece is located in Atlanta, Georgia. While the majority of her creations cater to meat eaters, she has vegan options too. Like this Vegan Pasta Bowl. I’ll be visiting Atlanta this year so I’m going to make it my business to dine at her restaurant!
When I changed my diet I assumed my meal options would be limited but once I started looking for ideas I discovered that I was wrong. I’m not trying to push Veganism on anyone but if you’re looking for inspiration... it's out there.
